Rosie's Fish Fry Batter

This is a recipe Herb got from his mom. This is his story:

When we were kids still at home, our mother taught us all the basics of having to cook for ourselves.. Part of this ritual was preparing meals on the weekends. Usually this was when we would get visitors and as individuals we would do our utmost to prepare our part of the meal to the best of our ability, because whoever tasted the meal would comment, very loudly, "Who Cooked This Meal?" Of course if you were the one, you would smile your biggest smile and say, "I Did!"

One of these Recipe's was a batter for fishy bits. Mom would use this batter recipe and we would watch very carefully as she mixed the secret ingredients.

So this recipe is in honor of our mother Rose.

I share it because she loved sharing meals with as few or as many people who walked through our doors.

Preparation Time: 10 mins Cooking time:8 mins per pan full.

  • 1 1/2 cups flour
  • 4 tsp baking powder
  • 1 tsp sugar
  • 1 egg
  • 1 1/2 cups milk
  • 1/2 tsp salt
  • pepper to taste

Mix dry goods together.

Separately mix 1 egg with 3/4 cup milk. Add to dry goods and mix. Add rest of milk stir well

When the mix puffs up with the baking powder reaction gauge how dry it is...you may need to add a little more milk to the batter...

Put the fish in the batter and make sure it is completely coated.

Heat pan to a hot temp, add at least 1/4 inch oil then turn down to medium heat. Cook battered fish till dark golden brown...

This recipe will batter at least 3lbs of fish...

Serve with rice, salad and drink of choice...
